Who would’ve thought Bisquick would make pretty good baked chicken tenders?

Ultimate Chicken Fingers

3 boneless skinless chicken breasts cut crosswise into 1/2″ strips (or 1 lbs of chicken fingers)
2/3 C Original Bisquick Mix
1/2 C Grated Parmesan cheese
1/2 tsp salt
1/2 tsp paprika
1 egg, beaten
3 Tbs melted butter

Heat oven to 450F. Line cookie sheet with foil; spray with cooking spray. In a 1-gallon resealable storage bag, mix Bisquick mix, cheese, salt, and paprika

Dip half the chicken strips into eg; place in bag. Seal bag; shake to coat. Place chicken on cookie sheet. Repeat to use up remaining chicken. Drizzle butter over chicken.

Bake 12-14 min, turning halfway through bake time until no longer pink in center.

Update: Amber left a comment below that I thought would be a helpful note to add on: “I season my biscuick and my chicken very well. Then I coat the chicken with the seasoned bisquick, then dip it in the beaten egg and then back into the bisquick mixture. This forms kind of a second skin and it is fantastic.” Thanks, Amber!

    Ok, I too have used something similar to this recipe. I think it is fantastic. The only thing you didnt list here is what to do with the egg for the beginners, so I thought I would tell you what i do. I season my biscuick and my chicken very well. Then I coat the chicken with the seasoned bisquick, then dip it in the beaten egg and then back into the bisquick mixture. This forms kind of a second skin and it is fantastic.     The only thing I recommend other than this is that you fry it instead of backing it so that it doesnt get too doughy. I realize that you may be using this recipe to cut back some of the bad fat that comes with frying, but it really is better fried. I would stick with a canola oil or an olive oil if that is the case. By the way Mr Sanders used a ton of spices with KFC and so do I, it makes a huge difference. Enjoy!!!!
